What I've learned about ice cream is it's an extraordinary vessel, and it's a vessel for history, for joy, for nostalgia, and it's intersectional.

What I really admire about Loke, is the way she views the big picture of what she’s doing. It’s not just about creating over 300 flavors (which she’s done!) At it’s core it’s about bringing people joy. But it’s also about telling a story and connecting people. She views herself not just as a chef, but as an artist.

I've always been inspired by paintings. That medium has really influenced me and shaped how I do this ice cream thing, how I want it to look.
